Cooking meat without the use of an oven or a stovetop is one way to make sure you have a great-tasting barbecue, which is always welcome during those hot summer months. One type of cooking that has gained popularity in recent years is using a gas smoker.

Advantages of buying a gas smoker:

  • The temperature can be easily adjusted so it’s possible to smoke foods at the correct temperatures for good results with minimal fuss
  • It will work no matter what weather conditions are outside
  • There’s little chance of having any flare-ups when smoking food since there aren’t open flames inside the chamber
  • Gas smokers are easy to maintain because they’re clean and easy to clean

Disadvantages of buying a gas smoker:

  • It’s more expensive to run than other types of smokers like charcoal or electric
  • The heat source can be difficult to control
  • A lot of models don’t have sufficient room for longer pieces of meat, so they are best used for smaller cuts
  • Gas smokers aren’t suitable for cooks who enjoy smoking foods with lots of different flavors as it can make some foods taste “gas-like”

Getting the most smoke out of your propane smoker

Before using the smoker for the first time, burn off any residual manufacturing oils by bringing up the temperature of your smoker to 300 degrees Fahrenheit.

Don’t add too much wood to your firebox – this will result in a less intense smoke flavor and more ash.

Keep an eye on your coals throughout the cooking process; if you notice that they’re getting too hot, then it’s time to dump them out. We want our temperature to be between 250F-300F when smoking food so we keep our temperature gauge below 125%. If you are not monitoring your temperature regularly I would recommend keeping your damper one or two inches open from closed (completely shut). Do NOT mess with anything but the damper while smoking unless you know what you are doing.

When you’re done smoking food, let it sit in the smoker for at least 30 minutes before taking it outside or inside. This will allow any excess moisture to evaporate and also let the meat rest. Remember that a 10lb turkey won’t fit on your plate without the bones so don’t try to take everything out of the smoker at one time. You can optionally cover your meat with aluminum foil after cooking to prevent it from burning if desired. Be sure not to get too much smoke into your foil though!

Monitor how much liquid is left in your propane tank before refilling – make sure there are no leaks by turning on all of the valves and checking underneath where you refill your tank. If you drop your propane tank and dent it, take it right back to the store where you bought it – do not use a dented tank. Never open the valve of a full propane tank without letting out some of the gas first or else there may be a dangerous build-up of pressure.

Lastly, if you are wanting to buy your own grill check out any local newspaper classifieds as well as Craigslist for all sorts of grills. These smaller grills can cost anywhere from free (gently used) up to $50 brand new but they work great for smoking food and grilling for two people who don’t want the hassle of large-scale cooking on an outdoor smoker/grill. A smaller grill is also safer if you have pets or little ones running around. My wife and I like to use our grill for special occasions but it’s never too soon to start thinking about grilling season!
